SMALL FRUITS

Sant’Orsola is an organisation of agricultural producers specialising in the production and sale of small fruits, strawberries and late harvest cherries. It is based in Trentino, in Pergine Valsugana, a few kilometres east of Trento and currently counts on the work of over 1,000 member companies.

GOAT CHEESE

The “pezzata mochena” goat is an indigenous breed to Valle dei Mocheni.

There are about 250 of them. Mochena milk is used to make fresh cheese from pure goat’s milk or from milk mixed with cow’s milk.

LUCANICA MOCHENA

Lucanica mochena is a pure pork sausage to be eaten preferably raw, accompanied by rye or white bread in the Trentino tradition. It is made from selected pork meat, which is minced and then salt, black pepper and garlic are added.
